Pasta with Tomato Cream Sauce
Ingredients:
- 1 pound spaghetti
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1 can (28 ounces) crushed tomatoes
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions:
- Cook spaghetti according to package instructions in salted water. Reserve 1 cup of pasta cooking water before draining.
- In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes. Cook until fragrant, about 2 minutes.
- Add crushed tomatoes and bring to a simmer. Cook for 10 minutes.
- Stir in heavy cream and Parmesan cheese. Cook for 5 minutes or until sauce thickens. Season with salt and pepper.
- Add cooked pasta to sauce and toss to coat. If the sauce is too thick, use reserved pasta water to loosen it up.
Taco Pasta Skillet
Ingredients:
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) black beans, drained and rinsed
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 8 ounces pasta shells
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- Optional toppings: chopped tomatoes, avocado, sour cream, cilantro
Instructions:
- Cook pasta according to package instructions in salted water. Reserve 1 cup of pasta cooking water before draining.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic. Cook until softened, about 5 minutes.
- Add ground beef and brown, breaking up any clumps, about 8 minutes.
- Stir in diced tomatoes (with juice), black beans, chili powder, cumin, paprika, and garlic powder. Simmer for 10 minutes or until sauce thickens.
- Add cooked pasta to skillet and toss to combine. If the sauce is too thick, use reserved pasta water to loosen it up.
- Sprinkle cheddar cheese on top and cover with lid to melt cheese, about 5 minutes.
- Serve with desired toppings.
